Centrifuges, freeze dryers, digitally-controlled water baths and liquid-nitrogen filled Dewar flasks are just a few examples of technologies that have transformed the modernist kitchen. The computer remains an underutilized tool for exploring the hows and whys of cooking. In this talk at the University of Washington, Nathan Myhrvold and Chris Young of Intellectual Ventures show how computationally intense heat-transfer calculations can reveal the subtle factors that influence the success or failure of a cook&#8217;s efforts in the kitchen. Explore the virtues of computational cooking, and watch novel techniques and creations made possible when science informs the culinary arts.</p>

For reference, the recipe for Puerco Pibil given here is: 5T whole annato seeds 2t whole cumin seeds 1T peppercorns 8 whole allspice seeds 1/2t whole cloves Grind the above in a spice mill/coffee grinder. 2 habanero chiles, stems and seeds removed, chopped 1/2 cup orange juice 1/2 cup white vinegar 2T salt 8 cloves garlic Combine the above with the spice mix in a blender, and puree. Juice of 5 lemons splash tequila 5 pounds pork butt, cut into 2-inch cubes Combine all ingredients in a zip-top bag and mix well. Line a 9&#215;13 pan with banana leaves; add the pork mixture; fold over the leaves to cover, then cover tightly with foil. Bake 4 hours at 325; serve over rice.</p>

It has long been known that citric acid (in this case a lemon) is nature&#8217;s anti-bacterial agent. Today it is more commonly known as produce wash or FIT (Fruit and Vegetable Wash). There are many studies out today that consider FIT a more successful anti-bacterial agent than chlorine dioxide (which is produced chemically rather than naturally). Many cultures continue to use the citric acid from lemons and limes to cleanse meat and fish as this marinade does. Clara cooks quite responsibly and always uses the freshest meats and fish when preparing her meals. You must always cook any meal at any time at your own risk. Clara is only providing you with lessons she has learned and she has lived to a ripe old age. If you are nervous about her tips then just enjoy the videos for the historical value.
